Yellow tea is one of the rarest types of tea, produced only in China. It is a high quality beverage. Its production is a long, painstaking, handmade process.
The tea is made from the barely unfurled leaves of the tea tree, so it is always of the finest quality.
Yellow tea can be distinguished as a separate species, but it is similar to green tea in its processing.
Only the drying process is longer. The leaves stay wet longer and turn slightly yellow due to oxidation.
The longer drying time results in a yellow tea that loses the pungency characteristic of green tea and gives it a very pleasant sweetish, full-bodied flavour.
